Triple layer birthday cake

Celebrating someone’s birthday soon? Instead of trying to figure out the perfect gift make them happy through their tummy! Your friend won’t know what has hit them when you bring out this triple layer, chocolate-vanilla, buttercream icing and m&m stack of absolute, amazing, deliciousness. Recipe inspired by Bill Granger.

Chocolate Cake Ingredients –
2 1/4 cups plain flour
2 1/2 teaspoons baking powder
50g good quality cocoa powder
1 cup caster sugar

250g very soft butter
4 free range eggs
2/3 cup milk

Vanilla Cake Ingredients –
1 1/4 cups plain flour
1 teaspoon baking powder
1/2 cup caster sugar

125g very soft butter
2 free range eggs
1/4 cup milk
1 teaspoon vanilla extract

Buttercream Icing Ingredients –
3 cups icing sugar
1 cup very soft butter
1 teaspoon vanilla extract
2 tablespoons fresh dollop cream
1 packet original M&Ms (or your favourite chocolate for decoration)

Method –
1. Preheat the oven to 180 degrees.

2. Make the chocolate mixture first. Sift the flour, sugar, baking powder and cocoa powder into a medium size mixing bowl. Add the butter, eggs and milk and mix with electric beaters on low speed for 1-2 minutes until smooth.

3. Spoon into 2 greased 20cm cake tins and bake for 25 minutes or until a skewer inserted comes out clean. Leave in the tins for 5 minutes before transferring to a wire rack to cool.

2. Make the vanilla mixture next. Sift the flour, sugar and baking powder into a medium size mixing bowl. Add the butter, eggs, vanilla extract and milk and mix with electric beaters on low speed for 1-2 minutes until smooth.

3. Spoon into a greased 20cm cake tin and bake for 25 minutes or until a skewer inserted comes out clean. Leave in the tin for 5 minutes before transferring to a wire rack to cool.

4. Next is the icing. Add the icing sugar and butter to a medium sized bowl and combine using electric beaters. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.

5. Place the base chocolate layer on a cake stand. Spread with buttercream icing, then add the vanilla cake on top. Spread another layer of icing on top followed by the final chocolate cake layer. Finish it off with the final layer of icing and M&Ms. Enjoy!
