market breakfast

We love heading down to the farmer’s market early on the weekends to buy the bulk of our fruit, vegetables, meat and eggs for the week ahead. Buying directly from the farmer instead of through the big supermarkets means the produce is fresh, we’re keeping our carbon footprint local and it generally hurts the wallet a little less than usual. The thing we love most about our market visits is cooking up a feast when we get home with all the gorgeous produce we’ve just purchased. These are some of our breakfast favourites…

Boiled egg and spinach on toast
Ingredients:
Fresh ciabatta
Egg
Spinach

Method:
1. Place egg in a pot and when water starts to boil let it sit for another 3-5 minutes (depending on how you like it). Drain.
2. Cook toast.
3. Sauté the spinach leaves with a dash of olive oil, salt and pepper until just wilted.
4. De-shell your egg.
5. Assemble – toast, spinach, egg.

Kale, avocado and poached egg on toast
Ingredients:
Fresh ciabatta
Two eggs
Kale
Avocado
Lime

Method:
1. Poach the eggs – Boil a pot of water, add 3 tablespoons of white wine vinegar, lower the eggs into the water and boil for 2 minutes. Scoop out and drain on paper towel.
2. Cook toast.
3. Sauté fresh kale with a bit of olive oil, salt and pepper.
4. Assemble – Spread avocado on the toast, add eggs on top. Kale on the side and squeeze the lime for a bit of zing!

Potato rosti, ham and fried egg
Ingredients:
Potato
Rosemary
Fresh ciabatta
Sliced ham
Two eggs

Method:
1. Prepare rosti – Grate one small potato. Squeeze out excess liquid. Add slice rosemary and a bit of butter/olive oil. Place into pan to fry. Cook until golden brown.
2. Fry eggs in pan to your liking, along with slices of ham.
3. Cook toast.
4. Assemble – Toast with ham and eggs, potato rosti and spinach on the side (if you please).

Vegetarian heaven
Ingredients:
Two eggs
Fresh ciabatta
Spinach
Mushrooms
Tomatoes
Avocado

Method:
1. Scramble egg in a bowl and then place in a fry pan, continually scrambling them until cooked through.
2. Place in mushrooms, tomatoes and spinach to cook with a bit of olive oil.
3. Cook toast.
4. Slice avocado.
5. Assemble – Eggs on toast with mushrooms, tomatoes, spinach and avocado on the side.

Simple breakfast snack
Ingredients:
Fresh ciabatta
Avocado
Cherry tomatoes

Method:
1. Slice bread length ways and toast.
2. Scoop out avocado and spread onto toast.
3. Cut cherry tomatoes in half and place on top.
4. Sprinkle with salt and pepper.
