muesli how you like it

Nothing beats homemade because you know it’s going to be fresh, nutritious and most importantly delicious! We’re pretty picky when it comes to breakfast cereals because we hate all the hidden sugars and preservatives, so we’ve come up with a super quick and healthy way to make our own. Besides taking up almost none of our time to make, we also get to make it from everything we love most.

Ingredients

*Note: You can include any sort of your favourite nuts and dried fruit, and to any ratio you like. There are no measurements next to the ingredients because we like to play it by ear and just throw in whatever we have in our pantry.

raw almonds
raw cashews
pistachios
macadamias
walnuts
dried cranberries
sunflower seeds
pumpkin seeds (pepitas)
chia seeds
shredded coconut
oats
coconut oil (about 2 tablespoons depending on amount of mixture)
golden syrup (the more you add, the sweeter the taste)

Method

1. Place whole nuts into a food processor and pulse until pieces are the desired size. Add the sunflower and pumpkin seeds and pulse once or twice to break them down slightly.

2. Combine the nut mixture with the chia seeds, shredded coconut and oats in a large bowl. Drizzle over coconut oil and golden syrup and stir through to evenly coat the mixture.

3. Spoon it out onto a baking tray and bake for 20-30 minutes in a preheated oven (about 200 celcius). Make sure you take it out every 10 minutes to stir so all elements get evenly baked. Add the cranberries to the tray when you have about 10 minutes left of baking.

4. Allow it to cool completely on the tray then spoon into storage jars, or straight into a bowl like we did! Serve it with fresh fruit and your favourite milk (almond, quinoa or soy) for a nutritious breakfast or a delicious midnight snack without the guilt.
